I was immediately intrigued by the viral cottage cheese bread when I first saw it on TikTok. My first thought was that a bread like this could easily add protein to my morning, which is usually the hardest time to get enough protein.  

The next morning, I decided to make it, and it was incredibly quick to prepare. Simply add the two ingredients to a blender, spread the mixture on a baking sheet, and bake for approximately 40 minutes. It couldn’t be easier!

To my surprise, the taste and texture were great. I also added Everything But the Bagel seasoning, which gave it a fantastic flavor. 

Honestly, because the ingredients are so simple, you can add different seasonings and any filling you want! 

Make it sweet or savory and eat it at any time of the day.

The Ingredients

Let’s talk about the ingredients for a moment.

Cottage cheese: For this recipe, it’s best to use 2% or full-fat cottage cheese. I used 2% because that’s what I usually have on hand. It’s already salty enough, so you don’t need to add any extra salt. 

Eggs: This will help bind the bread and will add protein. 

You can also add the seasoning of your choice for a kick of flavor.

Ingredients
  

  • 1 cup full-fat cottage cheese
  • 2 eggs
  • Seasoning of your choice optional

Instructions
 

  • Set your oven to 350° F. Line a baking sheet with parchment paper.
  • Combine the cottage cheese, eggs, and any optional seasoning in a blender or food processor. Blend until the mixture is smooth and creamy.
  • Pour the blended mixture onto the prepared baking sheet. Spread it evenly to form a rectangle.
  • Bake for 40 minutes or until the bread is golden brown.
  • Top with your favorite toppings and enjoy!
